With zabaglione if one wants the best texture (no "burned" yolks) and flavor, vigorously whisk caster sugar little by little to the eggs to form a soft lemony ribbon prior to cooking the custard. This aids texture and volume. And then you begin cook the custard base over steam till light custard trail just begins to form, slowly whisking in warm marsala AFTER that step. This will preserve a little more "punch" and bloom to the wine.
