2½ to 3 dozen clams (preferably little necks)
1/3 to ½ olive oil
6 large cloves of garlic chopped
½ cup chopped Italian parsley
½ teaspoon red pepper flakes
½ cup white wine (optional)
1 ½ lbs. of linguine
Salt to taste
1 28 ounce can of tomatoes (optional)


Wash clams with scrub brush if you purchase them whole; otherwise, if you can find a fish market that can remove the clams from the shell even better. Cut up the clams to desired size or leave them whole if you prefer.

Saute garlic, parsley and pepper flakes in olive oil until garlic starts to sizzle or just begins to brown around the edges. Add clam broth (white wine if using). (If you prefer the red sauce, this is the time you would add the tomatoes to the clam broth.

Let this simmer for about 15 minutes.) If not adding the tomatoes, simmer the clam broth for a few minutes before adding the clams. After adding the clams, let the sauce simmer for about five minutes. You can also add some of the pasta water.

In the meantime you should be boiling the water for the linguine. Add lots of salt to the water. When linguine is cooked to your preference (I prefer al dente and cook the linguine for seven minutes), you can remove it from the pot with a pasta claw and dump it into the clam sauce. Sprinkle a little fresh chopped parsley.
