How Italy’s Best Porchetta is Made (VIDEO)
Vito’s Norcineria was established a century ago or so in Marino, a small town a few kilometers south of Rome. There, he makes a mix of classic salumi, sausages, and prosciuttos, along with some more esoteric stuff that has grown out of his obsessive desire to research and perfect his craft: coppa di testa without testa, Arnad-style lard, and three kinds of salumi made from three different breeds of local pigs (some of whom are raised for him by an acquaintance who regularly blood-tests the animals to confirm the purity of their pedigree).

I would love to know at what temperature he cooked that beautiful looking porchetta at. In the subtitles it does say see you in 8hrs so I’m assuming it would have to be around 140-150c or lower if it’s cooking 8 hrs

I'm gonna make something like this today using a picnic shoulder and I am missing the dried fennel flowers this time. I am going to put whole garlic cloves in it however, maybe some dried onion. Don't know that I can sew it closed but I will put a good truss on it. Promised the wife a good dinner so wish me luck.

Anyway, the translation is not accurate here: 2:59 about the ground chili peppers, rare in porchetta, he says "ma proprio l'essenziale, eh?" that must be traslated as "but only a little tip of chili", not "it's essential". It's roman dialect.

I was actually in Rome and San Marino last summer… WHY DIDN'T I SEE this video B4 !! AArrgghhh ! To be honest the Lazio region like all other Italian regions is incredible for it's food , BUT…after visiting Sicily and staying 2 weeks there… DA BEST ! lol I am sure there must be 1% Italian in this Brit body of mine !!!
