RECIPE
DAY 106 – Sweet Zeppole

Makes About 2 Dozen (24)

Ingredients:

1 Ball of Pizza Dough [lightly floured only to prevent from sticking, not more!]
Vegetable Oil (for frying)

For topping:

½ cup (100 g) Regular Granulated Sugar
½ cup (100 g) Confectioner Sugar
½ cup (100 g) Cinnamon Sugar (½ a cup (100 g) of sugar mixed with 1 Tbsp (6 g) of cinnamon)

NOTE: if you choose to use all of the toppings, cut the amount of each one 3 times! ½ cup (100 g) of any of them is plenty for the entire batch!


Process:

1) Heat the oil in a deep fryer or a large pot to 375 degrees Fahrenheit (190 degrees in Celsius).

2) Lightly flour the pizza dough so it doesn’t stick (but don’t overdo it as the flour will burn then in the oil) and flatten it out with your fingers. Cut the dough into strips and cut the strips into little squares (I’ve cut my dough into 6 strips and each strip into 4 to 6 little pillows).

3) Fry them in the hot oil until golden brown all around for about 3 to 4 minutes. You can move them around with a slotted spoon so that they cook evenly on all sides.

4) Drain on a paper towel lined plate and immediately coat them with desired topping.

5) Serve right away for the best donuts you will ever have.
