Italian Spaghetti Pasta Salad! (Delicious Chilled)
Boil about 14.5 oz. to 1 lb. of thin spaghetti in a pot
until tender with 1 tbsp. kosher salt. Drain and chill.
Toss in about 2 tbs. olive oil before you chill it to keep
it from sticking!
Once chilled .. put it in a very large bowl and toss in
2 cucumbers diced up, a 10 oz. package of cherry
tomatoes cut in 1/2, then 1/2 of a red onion diced
up then 4 oz. can of black olives drained, 1 red bell
pepper diced up fine, and 1/2 cup grated Parmesan
cheese, then toss well.
In a 1 pint jar put…
1 tsp. black pepper, 2 tbsp. Italian seasoning, 1 tbsp.
of sugar, 1 tsp. kosher salt, 1 tsp. minced garlic, 1/2 cup
red wine vinegar, and 1 cup of virgin olive oil.
Shake very well, and pour it over the salad.
Now add a 5 oz. bag of mini pepperonis… (optional)
Chill it in the frig for 4 hours to overnight.
Service with a sprinkle of Parmesan cheese
and a pinch of black pepper! Enjoy!
