To much bread, to thick for my taste. I'd have sautéed the onion and bell pepper first, as they take longer to soften. I don't know if I'd like this on bread?! On the side would be better. Plus I'd have added shrimp to this dish.
It is true that eggplant absorbs the oil, but as it simmers, it gives it back up again, as I've noticed.
