CLASSIC TIRAMISU
Six (6) egg yolks, separated from their egg white
3/4 cup sugar
2/3 cup milk
1 Pound (16 oz.) mascarpone cheese
1 tablespoon vanilla extract
1-1/4 cups heavy whipping cream
1 (6 oz.) package ladyfinger cookies, about 28
2 tablespoons Dark Rum, (Brandy or bailey’s Irish Cream will work)
1/4 cup strong brewed coffee or expresso at room temperature
1 tablespoon unsweetened cocoa powder
1. Whisk egg yolks, in a 12″ skillet or 1-quart sauce pan, with sugar. Whisk until well blended. Slowly whisk in milk. Place over medium-heat and continue whisking until mixture begins to bubble. Cook an additional (1) minute. Remove from heat. Add to a bowl. Cover and refrigerate for 1 hour, or until cooled completely.
2. Beat whipping cream and vanilla extract until soft peaks form. About 3 minutes.
3. Fold in cooled custard with whipped vanilla cream until well blended.
4. Add expresso or coffee, and rum to a flat bottomed dish, such as a pie dish.
5. Quickly dip each ladyfinger cookie into the coffee mixture (be sure not to soak). Arrange slightly dipped ladyfingers, in the same direction, in the bottle of a 9″ by 9″ dessert dish.
6. Gently spread half the custard on top the 1st layer of soaked ladyfingers. Add the 2nd layer of soaked ladyfingers, in the opposite direction. Top with remaining custard. Cover tightly with plastic wrap and chill for 8 hours, or over-night.
7. Cut into desired squares. Using sieve, sprinkle unsweetened cocoa powder over the top before serving your TIRAMISU dessert.
