Substitute for wine?
If I'm making this for 20 people, how much time in advance should I prepare it and can it be kept it in the oven to keep warm or what do you suggest???

Cayenne NO, Cayenne would overpower the delicate sauce. Cayenne has its place in Mexican cuisine etc. But not in a delicate Piccata sauce. I have to follow Marcella Hazan on this one Chef, but I do love your Channel.

Fun tip: us Puerto Ricans sub chopped up Spanish olives for capers if were out & cant make it to the store. The flavor is very similar & thats the reason why we make olive & caper paste (alcaparrado).😁🇵🇷

This is one of my go to dishes for Italian night dinner parties. So easy and so delicious, excellent use of otherwise boring, boneless, skinless chicken breasts.
Tried this but didn't come out very good. Very sour, all I could taste was capers and lemon juice, not so pleasant. Next time I will try with half the capers and less lemon juice. (Where I come from, which is Italy, Piccata is generally made with swordfish, or veal rather than chicken).
