Bolognese uses ground meat (beef and pork in my case) and just a bit of tomato to create a rich, great tasting sauce for just about any pasta. Il sugo alla bolognese non si fa così. Si usa sedano carota e cipolla, niente aglio, nè origano nè basilico. Si fanno soffriggere le verdure poi si aggiunge la carne, non prima, si lascia rosolare e si sfuma con un bicchiere di vino. Poi si aggiunge la passata di pomodoro e si fa cuocere a fuoco basso. It's a meat sauce, but it's not Bolognese. Bolognese is not the generic word for Italian meat sauce, it is a very specific type of meat sauce.

Bigger pan. Lol…..looks good. Pretty much the way I do it. Name brands matter as well. I always use CENTO crushed tomatoes and yes, add sugar. Cream is a great idea too.
