Rice Balls Stuffed with Mozzarella -Italian Fried Rice Balls (Ricetta per supplí) (VIDEO)

Hey everyone! Last week I was in Rome, Italy. I had the most amazing week, spending time with lovely people and learning about Italian culture and food. Italy is full of love; reunion of families and friends, and tables full of delicious food. However, most of the time I was on the go. One of the foods I liked the most was Supplì (Roman street food). Supplì are fried rice balls, they are made with ragu sauce or plain tomato sauce, they have melted mozzarella cheese in the center. They are too die for.

Makes 12
INGREDIENTS:
2 Tbsp extra virgin olive oil
1 small onion, finely chopped
1/2 pound lean ground beef
Salt & pepper, to taste
415 ml (1-3/4 cup) tomato passata
1/2 tsp dried basil
1-1/2 cups arborio rice
Hot beef broth (I ended up using 3 cups)
1/2 cup freshly grated Parmesan cheese
3 Tbsp butter
1 egg, whisked
Mozzarella cheese, cut in cubes

Breading:
1 cup plain breadcrumbs
Salt & pepper, to taste
2 eggs, whisked


INSTRUCTIONS
1. Put a pot or a dutch oven over medium heat. Add the oil and allow to get hot, then add the onion. Stir and cook until softened, about 3 minutes.

2. Add ground beef, breaking it up with a spoon, add salt and pepper. Cook until the meat has begun to brown, 5-7 minutes.

3. Add tomato passata, dried basil, salt and stir until is mixed with the meat. Cover and simmer on low for 20 minutes.

4. So, after the 20 minute add arborio rice to the meat mixture and stir. Stir 1/2 cup of the hot broth. Cook, stirring frequently, until the liquid has been absorbed. Continue to cook on medium-low, adding broth in 1/2 cup increments, and stirring frequently after each addition, until most of the liquid is absorbed. The risotto is done when you’ve used all the broth the rice is creamy and just tender, 25 to 35 minutes total.

5. Remove from the heat; stir cheese and butter. Season with salt and pepper. Mix in the whisked egg. Allow mixture to cool.

6. Grab a handful of rice, place a cube of mozzarella in the center, and fold the rice around it to form a nice oval shape. Dip the suppli in the egg, and then in the breadcrumbs, making sure it holds together.

7. Heat the oil ( 360°F/180°C) and deep fry the suppli until golden brown. Drain and serve hot.
