One Pot Traditional Italian Recipe: Cod Fish with Potatoes (VIDEO)

The use of cod in Gallipoli (southern-east of Puglia region) cuisine has a great tradition that derives from the trade that, since 1600 and until the end of 1800, the city entertained with the countries of Northern Europe, including England, Holland, France, Sweden, Norway, Russia… Each ship that docked at Gallipoli used to bring goods of various kinds, including large codfish preserved in salt and fished in the North Sea.
The cod, preserved in salt or the stockfish, which is always cod, but preserved by drying, became a popular ingredient in Gallipoli cuisine.
The cod “a tiestu cu le patate” (in the pan with potatoes) is the main dish on the days of the Advent Saints of the city, but also on Christmas Eve, the 24th.

– 8 Pachino tomatoes
– Parmigiano Reggiano

– 6 bay leaves

– salt & pepper
– water
