How to Make Biscotti – Almond Biscuits / Cookies – Italian Recipe (VIDEO)

Biscotti (aka Cantuccini) biscuits or cookies are one of my favorite breakfast foods. They’re similar to granola bars in terms of nutritional value and taste. The almonds, egg, and carbohydrate provide the vitamins and flavor I want for a simple breakfast on the go. Please scroll down for the written recipe.

RECIPE
Ingredients
3 eggs
3 & 1/4 cups all-purpose flour
1/2 cup vegetable oil
1 cup granulated sugar
3/4 cup raw almonds
2 tsp baking powder
2 tsp vanilla extract
1/4 tsp salt
1 tbsp lemon zest
1 tbsp dark cocoa powder
1 egg – for egg wash


Steps
Add eggs to a mixing bowl.
Lightly beat to mix.
Add vegetable oil, sugar, vanilla extract, salt, and lemon zest.
Stir to combine.
Sift in the flour and baking powder.
Mix to combine.
Add the raw almonds.
Mix until nuts are evenly distributed through the dough.
Dust working surface with flour.
Transfer dough onto working surface and divide into 2 portions.
Further divide one of the halves into two.
Set 3/4 of the dough aside.
Add cocoa powder to the remaining quarter.
Mix evenly.
Lightly oil a cookie sheet, then line with parchment paper.
First, we’ll make a two flavors biscotti.
Lay chocolate dough onto the parchment paper.
Spread the dough until it is elongated and 1/3” (1 cm) thick.
Now, take the other 1/4 portion of the vanilla flavored dough and stack on top of the cocoa flavored dough, spreading evenly to become one piece.
Place and spread the remaining one-flavor dough on the cookie sheet.
Beat one egg diluted with 1 tbsp water to use as egg wash.
Brush egg wash on top of dough.
Bake at 325 F (165 C) for 30 minutes.
Then cool in room temperature for 20 minutes.
Prepare to slice the baked biscotti while still warm.
Using a thin and serrated knife, cut into 1/2” (1.5 cm) thick slices.
Lay slices on their sides across an elevated rack to let air circulate underneath.
Bake again at 300 F (150 C) for 20 minutes.
Let cool for 30 minutes.
After cooling, the texture of Biscotti should be brittle.
Dunk your biscotti into a cup of coffee or hot chocolate and enjoy!
