3 Zucchini (Spiralized)
2 Avocados
Juice of 1 Small Lemon
Tablespoon of Freshly Chopped Coriander (Cilantro)
1 1/4 Teaspoons of Ground Cumin
1/4 Teaspoon of Turmeric
Salt and Pepper
1/4 Cup of Olive Oil (plus a little extra for the pan)
Preparation Time: About 10 minutes
Cooking Time: About 5 minutes

Animals are dying most horrendously… surely we can do more than just meatfree mondays. It's so easy to eat meat/dairy free all the time with all the great substitute products and great new recipes like these. I've never enjoyed eating so much as when I decided to go plant based for the animals – my health really improved too! I no longer need coffee to wake me up in the morning and I have tons more energy ^_^
