Italian Grandma Makes Homemade Ravioli (VIDEO)
RAVIOLI FILLING:
2 lbs Whole Milk Ricotta
2 Extra Large Eggs
1 cup Pecorino Romano Cheese (grated)
RAVIOLI DOUGH:
1/2 cup warm Water with 2 Tbsp Salt (mix)
5 Extra Large Eggs
Unbleached All Purpose Flour
Make me sum meata balls grandmama
Always better the next Day also, Nothing like left over Ravioli's Period. When ever I came Home on Military Leave, I Always knew what was waiting to eat, Its still my favorite Pasta etc.
My Mom used an empty Jelly Jar to cut out the round Ravioli's and a Fork was used to seal the edges on them so simple to make,They use to lay the finished ones on a clean sheet on top of the Bed Spread till they were ready to cook etc a whole Days hard work, But the end result was great Sure miss those Days lone gone but always Rememberd etc.
My Mom had a big Dough Board like that and about a 4 foot long Rolling pin A ( LOGANADOL) They use to call it I think, An Italian Equilizer us kids use to call it etc.
How much Flour do you use.? Thanks for sharing Reminds me growing up watching my Mom And Grandmother making them by hand only also etc.
Old school values, old school skills, millennial generation take notice. My parents [RIP] product of depression learned to get by with bare minimum. Heard their plight [horror stories], ingrained in my upbringing. That bag of flour and a few eggs, not forgetting cheese cannot be taken for granted. Those raviolis are a feast for Kings.

My grandmother, who is deceased may god rest her soul❤, wasn't italian, Taught me how to cook, very well. my grandma was 92 as she died, no chef could cook like her. only old people can cook am meal from scrap, that taste better then a 6 star meal. no flavor enhancers or something else. old people are the best. honor them.

My Mother was italian (full) and she lived in New Jersey also. She talked and cooked just like you. I am going to have chicken parmesagno tomorrow night and I already know how to cook the gravy.
