Italian Christmas Cookies (VIDEO)
I’m sharing with you a recipe so dear to my heart. My Grammy’s Italian Christmas Cookies. They are so addicting. I promise you’ll love them. Enjoy
Blend Together:
6 eggs
1 cup sugar
1 cup melted shortening
3 Tbs Lemon extract ( or anise )
Add
2 TBS baking Powder
4 Cups flour
pinch of salt
Bake at 400 for 7 minutes. Bottoms should be a light golden brown
Frosting
Powdered sugar
milk
cap full of lemon extract
I'm going to leave an update here because I saw a lot of questions from various people and I have some answers for you! Yes you can use crisco. And you don't even have to melt it if you don't want. I didn't! Yes it is 3 Tablespoons of extract and you can be heavy on it as it is only a light lemon flavor. Next year I'm going to incorporate some lemon zest to give them more zip. The last thing I saw people ask is can they freeze and they do! Beautifully! So I hope that helps out! I'm sure mine did not come out as good as the pro, but they were pretty darn good!!!!
When I mail cookies I top the box off with popcorn. It helps cushion the cookies!

I’ve never see shortening that’s not all vegetable. Is the non vegetable just lard?
We just finished making these and I made a HUGE blunder and added an extra tablespoon of powder and ended up with mini lemon biscuits (think drop biscuits) BUT in case you make that mistake, they are actually okay (granted I won't do it again… although I'm thinking strawberry shortcake would be great with these as the shortcake 😋)
I used butter flavored shortening – that was fine. I got 51 cookies and for the glaze I used about a cup of powdered sugar, 1 t lemon extract and I very carefully used half and half to the desired consistency and it was very yummy. Next time I will recheck the recipe, but my kids were so excited to have these that they didn't care that I blundered!
Can I mix these with my kitchen aid stand mixer? They look so good!
This is the first time in 6 years I haven't had to mail cookies to my military son because he is coming home for christmas! Am so happy. But I am going to bake these for him and us. Thank you and merry christmas.

the two times I've made these they're abit douguit in the centre still but brown on the bottom. should I cook them longer on a lower temp?

I know this is an old post, but I just found it today. The cookies look really good! I love lemon, so that's probably the version I will try. I've never made anything with anise, but I can't stand black licorice, and I understand that's what it tastes like. I guess I could do one batch that flavor, and give them all away. lol Anyway, thanks for sharing your family recipe!
P.S. Dontcha love how people are telling you that you can't do this, you have to do that, etc.? I'm guessing that if your family has been making them for years, you know what works! Good grief! Thanks again, I'm adding these to my list this year.
Kimmie, I want to thank you for this recipe. I have a girlfriend who’s from NY and on Sundays after church her momma would take her and her sister to a neighborhood bakery and she would buy cookies very similar to these. Her mother sadly passed away last year after a long battle with cancer. For Christmas I made her a tin of these cookies. I’ve never seen a woman cry like a child like I did that day. She said it was happy tears because it brought back beautiful childhood memories she had with her mother. So, thank you for helping me give her a small piece of her heart back. 💚
