Thank you so much for posting this. Your crepes look amazing going to make this for a first course at Christmas this year. I normally do a lasagna, but this is so special and a much lighter way to go especially with a few courses to follow.
Love to know I can make it with crepes. I always worried about putting the filling in the tubes of pasta. Do you ever mix spinach into the filling of cheeses, or use a meat filling?
I just made this dish and it was delicious. However, every time I try to make manicotti all the filling melts out of the crepe or the pasta style tubes. How do I correct this?

Hi Joe, the guy is right manicotti is an Italian American dish known in America! Here in Italy we call them cannelloni!! I'm Italian American & I left the States in 1984 & been living here ever since!! I like your versione of the manicotti which brings back memories of my life in the States!! Anyway I'm going to follow your recipe & invite some friends over so they can have a good Italian American style dinner!! In Abbruzzo they use more of the crepes than the pasta for their dishes!
