Oh my god! She used the word "sweat", in terms of cooking! I hate that! And that "pasta", that she said was small grain rice, and said it is high starch. That means high carbs,!! I didn't like this dish!

I've made this risotto many times … very good !!! a bit thick but good …. i'm not a parsley person so i don't add a lot of it
I put in peas OR Asparagus & slice some spicy Spanish OR Italian sausage and make a meal out of it

less mistakes with respect to other videos. I believe that this recipes are too much adapted to the US taste, I suppose. For instance three cloves of garlic…do you have problems with Vampires? Moreover before to start adding the broth the vine must be almost fully evaporated, the point in time where you start the "mantecatura" with the cheese should start when the risotto is more dried to create the so called "onda" (wave) appearance. You forgot to add black pepper, the use of parsley is excessive and no longer in use and the pees should be added around middle of the cooking time (they are frozen!). Typically it is used white wine with vegetables and the best toasting of the rice should be done by temporary removing the onion(but this is a trick).
Apart from this possible direction to improve the way to cook it is a good meal…if you were american, not italian!
I love her! What people seem to not understand is that she is Italian and a cook so she knows how much ingredients to add without measuring. It's perfect.

Why wouldn’t you add more wine or use some white wine in place of the stock occasionally to achieve a different flavor profile? Or would it cut the starch down / or lower it too much ? Or is there a different chemical change that would occur preventing the usage? Or just that stock provides the softer flavor profile necessary to not prevent harmony in the dish ?
