Hi Chef, 2 questions: I've noticed you used very little oil and no cream. Is there an advantage to adding either of these? When using fresh tomatoes, is there any benefit to cutting out the seeds, jelly and pith and just using the tomato flesh?

I just made this sauce. Delicious!! I'm not Italian but I love cooking Italian food! A couple of months ago I caned 2 cases of puma tomatoes and made the sauce with those. The sauce I made in past years was good but had to many ingredients. This sauce is Perfect!! I will be making it from now on. Thanks Cheif!!!

He wasn’t kidding about the wooden spoon I used my white plate scraper because I didn’t have a wooden spoon and it got stained and it got cracked. The curse is real.

Made this sauce today with Cento San Marzano tomatoes. I jacked up the red pepper flakes in mine & added a little Cayenne. I like it to have some subtle heat. I found the flavor a little bitter so I added just a touch more sugar. Let it simmer a couple hours. Turned out fantastic.
The more I let it simmer the more runny it gets. Anyone else have this problem?
I have a problem finding anchovy paste. Do you think I could substitute a little Asian fish sauce?
