Easy Italian Style Egg Noodles, Chicken and Tomatoes
A very easy dish for a very simple meal.
4 c Egg Noodles
28 ounces whole or diced canned tomatoes (drain half the liquid)
12 ounces canned chicken, drained
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp minced onion
1 tsp Italian seasoning mix (optional)
1 Tbs powdered cheese mix (optional)
Cook the egg noodles according to package directions.
While the egg noodles are cooking, heat the tomatoes. Add herbs, spices, and the chicken, and continue heating. Add the cheese mix now, if using it.
When the egg noodles are cooked, strain them. Add the tomato-chicken mixture, and stir until combined.
Serve hot.
Vegans and vegetarians, you’re going to leave out the chicken and the cheese mix. And, use an egg-free egg noodle.
If you don’t have whole or diced tomatoes, 28 ounces of crushed tomatoes would also work.

My ex absolutely LOVED this Italian dish that his mother would make for him growing up. I had never heard of this chicken and noodle dish before, but it seemed like an odd concoction yet simple meal. I tasted this on several occasions when his mother would invite me over for dinner. I thought was okay, but I could not understand why this was his favorite. It just didn't have the same effect on me. I suppose this dish brings him comfort. I'll admit he suggested that I get the recipe from his mother so I could also make it for him. She uses the crock pot, but her recipe calls for bone-in chicken, sauteed onion, sauteed garlic, dried herbs, egg noodles of course, canned crushed tomatoes. Her version was heavier on the dried herbs (rosemary, oregano, thyme, basil, parsley) which he loved, as well as the broth from the chicken flavored the noodles and sauce while it cooked. I guess your version is much quicker but just as flavorful. Thx 4 sharing!
