Some videos on making fresh tomato sauces I have seen first boil the tomatoes for a short while and then put them into ice water in order to more easily remove the skins. Is this necessary?

The tomatoes are so important, lol it's all about the tomatoes, seeds and skins gone awesome, I use a food mill but this way is actually faster
