Chocolate Italian Meringue Buttercream | How to make from Creative Cakes by Sharon (VIDEO)
This is the perfect recipe for Chocolate Italian Meringue Buttercream! If you’re not a fan of regular buttercream you’ll really enjoy this. It’s a more sophisticated frosting that’s silky smooth, , not too sweet, very light and has a nice gloss to it when you pipe it. Perfect for crumb coats, fillings or piping over an entire cake! Make sure you try it, above all it’s simply divine!

Material & Equipment Used in this tutorial :
5 egg whites
2 cups caster / super fine sugar
2/3 cup water
pinch of cream of tartar (or you can use salt instead)
450g softened room temperature butter
2 teaspoons vanilla extract
100g your favourite dark chocolate
This is the best buttercream ever I used it for a wedding cake and they were so happy with it. Its so versatile in hot weather too I use nothing now but this buttercream.
Hi i made this but after incorporating the chocolate turned into small bits of choc i I don't know what went wrong please help!

Do you add the melted chocolate while it's still warm? I tried adding it after it cooled down so it wouldn't melt the butter, and I found that the chocolate started to set in the buttercream and form tiny yet visible chunks

Can I add cream cheese to this after I add the butter? or will the ruin something? I want to make a carrot cake with cream cheese frosting, but I really want to try out this method for buttercream.
