My recipe calls for using butter to cool the mixture before adding egg yolks. I use a vanilla bean and a teaspoon of vanilla extract.
Maybe a tirramasu next? But I love rice pudding, and don't like it too thick, love the whipped cream, love this recipe. Nice looking, funny man who can cook. Wow.

Joe, love your channel, I just am driven off the deep end b/c that sound needs to COME DOWN with the music. If you are going for ambience with the music, it's so distracting, and it interes with my concentration of trying to listen to what you're saying. Kudos to you for adding the eggs/yolks. Finished product looks delish! No nuts though. Texture issues!

I use a bit of farro to give the pudding a nutty sweetness which allows me to add less sugar.
