Strawberry Italian Risotto Recipe | How Tasty Channel (VIDEO)

An incredible and quick savoury dish, from the finest italian tradition, that will leave breathless your guests!

Ingredients:
Makes about 3 servings

10,5 oz (300 g) Risotto Rice (Carnaroli, Arborio…)
About 4 cups (1 l) Vegetable stock
1 teaspoon (3 g) Shallot (or onion) chopped
2 tablespoon Olive Oil
6-8 fresh medium strawberries
1/2 cup (about 100 ml) milk
1 tablespoon (25 g) Mascarpone Cheese (or butter or heavy cream)
1/3 cup (35 g) Parmigiano Reggiano or Parmesan
salt to taste

Directions:

Coarsely cut 4-6 strawberries and finely chop 2 strawberries and the shallot.
Heat the stock.
Meanwhile, in a separate large pan, heat Olive Oil on a little cooker at high heat and fry the shallot just before it becomes coloured.
Add the rice and keep stirring it for 1-2 minutes, then add the milk and stir.
Add 2 scoop of stock and strawberries coarsely cut: stir and let it cook; stir moderately to avoid the rice to become sticky.
When the stock is almost dried, stir, add another 1 or 2 scoop of stock and let the mixture absorbe it: continue adding broth until the risotto is cooked (about 15 minutes): a perfect risotto is ready when the rice grains are “al dente”.
Meanwhile taste it and salt it if necessary: don’t be afraid to salt the mixture since mascarpone will sweeten the risotto.
Turn off the heat, add mascarpone and Parmigiano Reggiano cheese (or parmesan) and stir.
Serve immediately with the finely chopping strawberries on top.
