I live a mile from a large, local cheese factory and went in to buy plain curd. I learned, though, that one has to ask for the right kind of curd! They have a cheddar curd AND they have a "mozzarella" curd for making fresh mozzarella cheese. I almost made a mistake. Had I not mentioned to the girl what I was going to be making, I'd have had the WRONG plain curd…so you'll want to be sure to specify when buying the curd. Just sharing the tip…Going to make fresh mozzarella today…

I just made this, not 15 minutes ago and wrapped it around prosciutto and basil per your recommendation on Kimmel earlier this week. Kimmel was what prompted me to go ahead and try it. I made my curds fresh too.
Tips to any other viewers:
1. Make small batches: 1 lb at a time (1 gallon 2% milk makes 1 lb of curds)
2. Work small when making boccocini. Break the mass into small workable chunks. They heat faster in the water.
3. keep the hot water on hand and change it often.
