I do it all the time, but I replaced my potatoe with turnips. Because I hate potatoes so much! For my pasta I use brown spaghetti and instead of spinach I use kale.

I made this minestrone tonight with a few changes. I don't use oil, so I always skip that, but I did put some salt in it. Also, I used ditalini for the pasta, cannelini beans, and dried basil because that's what I had on hand. Delicious!!!

I can't figure out if salt or sugar are the hardest for me to quit, but I notice if I continue to eat salt, I want to keep adding it to my dishes. If I don't eat it for a while, it's too over powering in dishes and I want to skip it. Using other things such as maple syrup seems like it would definitely flavor a soup very well. I tend to use low sodium broth. Better than bouillon is my favorite but it's pretty salty lol
Edit: This soup is so beautiful. I really want to go make some in my instant pot now 🙂
