Hi Chef Eric, the tiramisu looks spectacular but what I do not like are the raw eggs, because it does not prepare eggs in a bain-marie, sabayon type (zabaione in Italian) is healthier and does not run the risk of being contaminated With the chicken bacteria, the eggs can be very fresh, but nobody guarantees that they do not have the bacteria.
My question, do you change the flavor of the tiramisu by preparing it for a bain-marie or is it the same?

Hello chef Eric. Thanks for the video, it’s fantastic. I have tried to make it using the same method but my tiramisu is not set… why is that? I put it in the fridge overnight and hoping to have it in the morning but the texture is as same as when I first put it in the fridge!..

It would be great if recipe would be in metric (g and ml) as well. It really puts me off to try to cook/bake anything if I have to spend time to convert the recipe.
