Have always been told to sautee the onions and once the onions are almost done you add the garlic because the garlic burns too easily

Pour off the oil and instead of transfering the balls TO the sauce, just pour the sauce into the balls. lol
Tip: I always make the balls then freeze them BEFORE you fry so they're perfectly round. Don't have to be frozen solid.
