Isn't it true that the longer the clams cook,the tougher they are?…This is the third vid. that I've seen tonight where all the chefs seem to overcook the clams… Am I wrong?….I mean, I would cook them in the liquidY sauce and then remove before I cook the sauce down- then add them to rewarm them at the end… but, hey,I'm up for learning…All, ideas welcome

I love Clemenza's video's – he really should think about maybe building a channel called "Cooking with Clemenza." I think he has a future here having a regular show.
