I literally grew up on this homemade pasta. My mother and grandmother made it exactly the same as Fabio version (but without the mixer).
My Sicilian Nonna made ravioli with eggless dough. She rolled out the dough by hand. It was very thin. She cut the dough with a knife and crimped the ends with a fork. Her filling was ground beef, spinach and a little bit of ricotta. I would help her sometimes. What a lot of work! They were delicious and unlike any other ravioli I've ever eaten since. Thanks Fabio for reminding me of this great pasta taste.

My family came from Italy during the Depression, so I heard the “so poor” stories. They would tell me that a Zia would give them eggs for Christmas to make the Christmas Day pasta. Because of this poverty, the women in the family refused to make eggless pasta once they were in America. (Polenta, corn or wheat, was when eggs weren’t available.) I am glad that you showed us this recipe because I have Vegan friends that I promised to cook for, and I was afraid to make the eggless pasta. Won’t my friends be surprised, it’s not polenta for dinner! Gracia!
By the way, Mommom (LaMia Nonna) loved being in the kitchen cooking, especially if she was showing me how to cook. Now, I love being in the kitchen and cooking. My son’s friend even stops by when he isn’t home so he can eat my cooking. I Love it.

"Ultimate Poor Mans Food" – Why no nutritional data there "Chef", didn't they teach that? You know what nutrition is don't you, they do have a whole day on it in "school" right? You just choose to disregard it in others when you are trying to make money? It's "poor mans food" meaning it's a horribly easy way to overeat carbs. and whatever fat and extraneous calories you add to give it flavor. Pasta is a carbohydrate delivery system just like corn/flour tortillas or bread, not bad for you but is almost always overeaten and joined with high-calorie coatings. It can be a viable option for a proper diet if it's made from whole grain flours but food-pushers ("Chefs"… What culinary "school" did you attend and for how long?) usually won't go that route because all they care about is taste and money and making a great pasta from whole grain isn't as easy to pump out of a kitchen. These dealers are promoting not only bad eating habits but also poor health in the fools that shovel their concoctions in like there are no ramifications. So I ask again… why don't you provide nutritional data on all your recipes the "Chef"? Cant, don't care, or most likely you simply don't want people to see the nutritional data on the shit you recommend they eat? People like you prey on others with less control for nothing but pennies, you should be ashamed.
Does the type of flour make a difference? All purpose, “00” , or semolina
