Parmigiana is presumably a Southern Italian dish basically made with fried eggplant or aubergine, cheese and tomato sauce. There are a lot of variations and I learnt this one from an Italian Michelin star Chef known as “Pepe” on my recent travels on the south coast of Italy. It’s a delicate and very tasty dish showcasing the true Italian flavours.

Awwwww… This is the Italian version of beguni (bengali style which is fry with gram flour, Nigella seed, poppy seed, green chilly paste, salt, turmeric, baking powder batter… Deep fry must )… N the twist of cheese.. Ohhh mouth watering…please try the bengali version of beguni…

No Italian seasonings? Also what's different about this recipe and what contradicts my Italian stepdad's lifelong advice is – no soaking for a couple hours in a briny ice water to cause osmosis from the eggplant into the surrounding briny liquid in order to pull water out of the eggplant? That's just weird. Sorry. I've got to dry out my eggplants prior to frying. Other than that, I will try to emulate your process here (but I'll also sprinkle some Italian seasonings in too!)
I really like that many of your recipes are italian inspired and I really appreciate that they respect our cooking principles (simplicity and freshness of the ingredients) but with your personal twist and it's a great twist. You are a great cooker, I'm really happy to have found this channel, you deserve many subscribers. I just make an exception about a couple of recipes where you combine pasta and chicken that is something that we never do, I don't know why but it's really weird for us the idea to eat pasta and chicken together, but I will forgive you!
