COUNTRY SMOKEY ITALIAN MEATLOAF

COUNTRY SMOKEY ITALIAN MEATLOAF

Saute Ingredients
1 Pepper diced
1 Large Onion
2 TBL Olive oil
Chili (Optional)
Black Pepper & Salt to taste
I tsp maple syrup
½ cup red Lentils
1/3 cup cooked rice (optional)
½ cup strained tomatoes
Mesquite Liquid smoke to taste
Processor Ingredients
1 can chickpeas
Large handful of chopped parsley, optional
2 TBL Olive oil
1 ¼ Cup oats
7 halves sun-dried tomatoes chopped
3 cloves garlic
Added Mixing Bowl Ingredients
1 ¼ cups panko + crumbs
3 TBL ground flax seeds
½ TBL Agar powder
2 TBL Pesto
3 TBL vegan grated cheese or nutritional yeast
3 TBL Worcestershire sauce
1. In pan add pepper, onion, olive oil, chili, black pepper and salt and saute.
2. Half way through saute process add maple syrup and lentils and stir well.
3. In food processor add chick peas, parsley, sun-dried tomatoes, olive oil, chili, and black pepper and pulse to small consistency.
4. Add pulsed mixture to medium sized bowl and add olive oil, oats and mix well.
5. Add sauted ingredients to mixed pulsed ingredients and mix well.
6. Check, season to taste.
7. Add Panko and flax seeds, mix well.
8. Add agar powder, mix well.
9. Add pesto and grated cheese and mix well.
10. Add Worcestershire sauce and mix well.
11. Check, season to taste.
Line pan with oiled parchment paper. Oil hands and form mixture into three loafs, drizzle loafs with oil and rosemary and top with sauce. Bake in 350 to 375 preheated oven for 1 ½ hrs
NOTES:
If you use a bread pan, firmly pack it to make a nice firm loaf. If you free form, let it rest to ensure a firm bond.
SUBSTITUTES: For strained tomatoes use tomato sauce.
For pesto – Mix Vegan mayo with basil.
For agar power; Agar flakes; about 5 to one ratio.
For Worcestershire sauce use soy sauce.
To make Gluten free: For panko sub chick pea flour or corn flour.
To be more heart-safe and cancer-safe, I'd roast, instead of frying with oil, the vegetables. The roasting flavor is delicious, without the iffy liquid smoke. I'd use a whole grain, not white rice.

Worcestershire sauce is not vegetarian or vegan as it contains anchovy fish but there is a vegetarian alternative

OR you can get the misto sprayer. I got them on a two for one deal at Ross and then found another at Kroger for $2, so I have three of those pumps for different oils. You pump the lid and it builds up pressure and sprays like a regular spray can! SO worth having those that you just refill with your choice of oils. Can't wait to try this. Had to watch it again. lol
