3 EASY VEGAN PASTA RECIPES | Vegan Carbonara | VEGAN Alfredo | Spinach & Sausage Gnocchi | Edgy Veg (VIDEO)
On today’s episode of the Edgy Veg Candice is going to show you how to make 3 delicious vegan pastas. There are recipes for Vegan Carbonara, Vegan Sun Dried Tomato Fettuccine, and even a one pot Spinach Sausage Gnocchi recipe.
Candice starts things off with the Vegan Carbonara recipe. Carbonara is traditionally made with parmesan cheese and bacon, as we all know these are off limits to any vegan. Fortunately Candice has some up some excellent substitutes. You will start off making your bacon substitute, which is actually going to be mushroom bacon. Cut up whatever mushrooms you may have on hand and put them in a medium sized bowl. Add 1 tbsp of Tamari to your bowl along with 2 tbsp of olive oil and some fresh cracked pepper. Stir that well and toss your mushrooms in mixing them around in the sauce to get an even coating. You will set those aside for about 10 minutes and let them soak up the flavors.
While your mushrooms are marinating get a large pot, fill it with water and then bring it to a boil and add your pasta to it. Now that we have several of our main components cooking it’s time to focus on the sauce, which is actually a tofu and cashew sauce. Add 1 1/2 cups of tofu, 2 tbsp nutritional yeast, 1/2 cup of cashews, 3 cloves of garlic, 1 tsp of vegetable bouillon, and 3/4 cups of soy milk into your blender. Blend this all together until it reaches a smooth, creamy consistency. Now heat a skillet over medium-high heat and sauté your mushrooms in it for about 4 minutes on each side or until your mushrooms are brown and slightly resemble little pieces of bacon. Sticking with same pan our your mushrooms into a bowl and add a fair amount of chopped onions. Sauté those for about 3 minutes then pour your sauce right on top. Follow that up with your spaghetti noodles and your mushroom bacon. Mix that all together well. Congratulations, you just made vegan carbonara.
Candice moves on to her recipe for a Sun Dried Tomato Fettuccine Alfredo. The first step in this recipe is to bring your water to a boil and toss in your Fettuccine noodles. In a skillet heat up some olive oil, add garlic, and a small onion and let it cook for about 3 minutes. Transfer all of that into a blender and add 1/2 cup of cashews, 1 1/2 cups of soy milk, 1/4 cup of nutritional yeast, 1 tbsp of lemon juice, and lastly 1/4 cup of vegan parmesan cheese and a bit of salt. Next, just blend it all together well. Once your pasta is Al Dente empty out the pot and pour your freshly created sauce into it. Add chopped sun dried tomoatoes into the sauce and mix that well, then add your noodles and keep mixing it all up. That’s all there is to making Sun Dried Tomato Fettuccine Alfredo.
Pasta number 3 is a delicious Spinach and Sausage Gnocchi. In a large skillet heat up some oil, add in garlic and onions and then sauté them. Now crumble up some vegan sausage and mix it in along with 1/4 cup of vegetable broth and 1 can of diced tomatoes Mix that all together and then add in a package of store bought Gnocchi. Cover you pan and let your ingredients cook for about 5 minutes. After 5 minutes sprinkle spinach over the top along with a little pepper, mix your ingredients together again, cover your pan and cook the whole thing for about 5 more minutes. After 5 minutes add in your vegan parmesan, give the ingredients another stir and you are done. Now that wasn’t so hard was it?

I see the common ingredient in these recipes is some sort of nut, is there another alternative I can use in place of nuts? I am allergic to nuts but I would love to try these recipes out.

What can you use to substitute the cashews?
Dishes all look great especially the last one 😋😋.. There's no doubt the flavors are there . but when i think carbonara or anything with Alfredo .. Im thinking creamy loose pasta that just melts in your mouth . when you tried your first dish the noodles literally clumped together and that was due to everything being dry . i would've added more soy milk to get a silker sauce. Good job .. Im a foodie so I'll eat anything if it looks good .

Why would anyone use tofu?? Its made with soybeans, soy increases breast cancer risks, it contains goitrogens which lead to depressed thyroid function. It also contains phytates which prevent absorption of life enhancing minerals. It is also loaded with phytoestrogens which sometimes block the hormone estrogen and have adverse effects on human tissue…ijs

Add some of the pasta water to make the sauce silky smooth so you wont have a lump of pasta. Other than that, great recipes!
