Lasagna is a classic Italian dish that is enjoyed by people all over the world. However, not all lasagna recipes are created equal. In this article, we will be showcasing a lasagna recipe passed down from an Italian grandmother from the town of Pescara, located across the boot from Rome.

This lasagna recipe involves the use of ricotta cheese, mozzarella cheese, and a homemade bolognese sauce. The bolognese sauce is made with minced garlic, onions, carrots, celery, red wine, beef (or turkey or vegetables), and a homemade marinara sauce. It is essential to cook the bolognese sauce for a long time to develop its flavors.

To make the lasagna, first, a béchamel sauce is made by melting a stick of butter, adding in flour, and slowly adding in heated milk while whisking continuously. The béchamel sauce should be thick and smooth, and seasoned with nutmeg, salt, and black pepper.

Meanwhile, a large pot of boiling water with plenty of salt should be prepared for the lasagna noodles. The noodles should be boiled for three to four minutes, less than the time specified on the box, as they will continue to cook in the lasagna.

To assemble the lasagna, layer the pasta noodles in the dish, followed by the béchamel sauce, bolognese sauce, and grated Parmesan cheese. Repeat the layers until the final layer is reached, and then sprinkle mozzarella cheese on top. Bake the lasagna in the oven at 375°F for 25 to 35 minutes, or until the cheese is bubbly and brown.

This lasagna recipe is sure to be a hit, with its gooey, cheesy, and saucy layers of pasta, béchamel, bolognese, and mozzarella cheese. So, the next time you’re in the mood for some delicious lasagna, give this recipe a try. You won’t regret it!
