Episode #2 – Making Pasta Fagioli with Nonna Paolone (VIDEO)
In episode #2 Nonna Paolone teaches us how to make a very popular and classic Italian dish called Pasta Fagioli. What is Pasta Fagioli? Pasta Fagioli is pasta with beans. If you are a fan of Dean Martin then you are very familiar with his song called “That’s Amore”. In that song Dean Martin talks about “Pasta Fagioli” singing, “When the stars make you drool just like a PASTA FAGIOLI, That’s amore”.

Ingredients for the sauce:
– Extra Virgin Olive Oil
– 2 Tablespoon of Chopped Onions
– Red Pepper Flakes
– 14oz Tomato Sauce
– 1/2 Cup Water
– Pancetta (optional)
– 1/2 chopped Garlic
– Salt
– Basil
– Parsley
– Sausage (optional)
– White Beans or Canned Beans
– Parmesan Reggiano Cheese
The sauce will cook and boil for 30 minutes on low heat.

Pasta e ceci is pasta with chick pea sauce. We make that too where I'm from. Love both bean dishes. The beans your mom cooked were white beans – the canned beans were cannellini (kidney beans) – two different beans. Your mom's preparation looks delish by the way! I'm watching this at 1AM and I'm starving! Is she from the Puglia region? She must be!
